Read an offer for four things: the clauses that restrict you after you leave (non-compete, training repayment, broad IP), the ones that make your week unpredictable (open-ended overtime, on-call, long probation), the pay that is not guaranteed (discretionary bonus, options without a strike price), and the terms it never mentions at all — start date, hours, leave days, notice, place of work, pension. Anything not written into the contract is not agreed, so ask for each gap in writing before you sign.
